Mushrooms are food heroes because they are an excellent source of nutrition and also good for the environment.

Edible mushrooms are rich in fibre, vitamins B, C and D and they’re packed with protein, which added to their rich nutty, umami flavour makes them a very delicious and nutritious substitute for meat.

They’re also good for the environment. Mushrooms help with carbon cycling, taking carbon from dead plant material and returning it in the soil. They can also degrade pollutants such as plastic and oil. here are more than 2,300 edible mushrooms, yet we eat only a fraction of this number on a regular basis.

Beans

Beans are one of the healthiest and most climate conscious foods. Nutritionally they’re rich in protein and complex carbohydrates, have a high fibre content which helps reduce the risk of chronic disease, and they’re a good source of anti oxidants, including flavonoids and polyphenols, which combat oxidative stress in the body.

Bean are an excellent environmental choice because they have a much lower carbon footprint compared to animal based protein.

They are generally require less water to grow and are often included in crop rotation cycles improving soil health and reducing soil erosion. Rotating beans can help break pest cycles reducing the need for chemical pesicides.

Seaweed

One of the few foods that has a positive environmental impact.

Seaweed is often called a superfood and we agree that it’s pretty super as it’s one of the few foods that has a positive environmental impact.

Growing seaweed doesn’t need fertiliser or freshwater and it doesn’t require deforestation or cause erosion. And it can have a negative carbon footprint!

Edible varieties come in all sorts of flavours from deep umami to those that are sweet.

Seaweed is really good for your health too, it’s an excellent source of vitamins and minerals and new research indicates a range of health benefits including heart health and prevention of diabetes.

Ancient grains – amaranth, millet, sorghum, teff, and others – are brilliant for helping diversify both diets and agriculture. They’re often more resilient, heat tolerant and water efficient than their modern counterparts, like corn and wheat.

And they’re better for you too with higher fibre, vitamin and mineral content. We think ancient grains taste better too.
