Cheesy Curry Baked Rice with Beans By Lucy Leonardi

Ingredients:

  • 1 onion finely diced
  • 1 tsp cumin seeds
  • ¼ tsp smoked paprika
  • 2 tbs curry powder
  • 1 cup of diced zucchini
  • 4 cups leftover cooked rice
  • 2 cups of pasta sauce
  • 2 cups of any cooked beans
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Method:

  1. Preheat the oven to 180C.

  2. Preheat your frying pan with some olive oil on medium heat then cook the onion along with the cumin seeds until fragrant.

  3. Next put in the chopped zucchini, curry powder and smoked paprika. Mix for another couple of minutes.

  4. Choose a deep oven dish to mix all the ingredients. Starting with leftover rice, beans and pasta sauce, then the onion & zucchini mixture. Season with just a pinch of salt and pepper then cover the top with shredded cheese.

  5. Cook in the oven for 30 minutes or until cheese layer is golden.
